相信大家在酒舖或超市都會見過一瓶瓶金黃色、細瓶身的葡萄酒,這些就是甜酒,比較常見的有曾被炒至數千元一瓶的冰酒,但其實甜酒還有其他種類,今回先講解一下冰酒。
You may often find some golden wine in small bottles like the one below. They are sweet wine, also known as dessert wine, also made from grape. The most common type of sweet wine is ice wine, but actually there are far more different types than that. We will talk about ice wine first here.
冰酒是以在樹上被凍至結冰的葡萄釀成,葡萄一般在 零下 8 °C 左右結冰,幾小時內採摘,再在結冰狀態下榨汁,榨汁時由於水份已成冰,可輕易除去,造成水份少,即較濃縮的葡萄汁液,再拿去釀酒,所以甜味極濃。
Ice wine is made of frozen grape. Grape are frozen on the vine at around -8 °C. They are then harvested within hours. Since all the water inside turns to ice, it can be easily removed. Therefore the extract from the frozen grapes is very concentrated. The wine made from the extract is hence very sweet.
好的冰酒除了甜味還有花香、蜜糖等香味,由於甜味偏濃,一般要冰鎮至 10 °C左右,否則只會嘗到甜味。食物方面適宜配以鵝肝等重油份食物或甜品。
Good ice wine should have floral and honey smell. Usually it is chilled to around 10 °C. If they are served too hot the sweetness would be too prominent.
Ice wine are good to be served with oily food like goose liver. They also good match with dessert.
